    Our soup of the day was my favourite Watercress Pear Cream. This is a wonderly fresh and healthy soup, and is extremely easy to make. Check the comment for the recipe. The freshness of the lime, the tinge of sweetness from the pear, and the soothing watercress, all blending beautifully to give a truely appetising soup and prepare you for the meal!

    One thing I've learnt from Angel, is that continuous tasting and seasoning are a crucial part in the process of making of good food. Blindly following the recipes only results in either excessive volume or unsuitable flavour. Well, trial and error is always an inevitable process of learning; making good food, just as doing all things serious, needs patience and scrutiny to the finest details. =)

    Comments:
    Ingredients:
    250g thoroughly washed watercress (enough for 4 by experience)
    3 medium pears sliced
    700ml vegetable stock / diluted chicken stock:water of 2:1
    salt and pepper for seasoning
    180ml double cream (recipe's 120ml not enough)
    juice of 1 lime

    Procedures:
    1. Simmer the watercress with the pears in stock for 10-15 minutes till soft. Season with salt and pepper before simmering;
    2. Blend the mixture in the food processor until smooth (since the pear sweetens the soup, it's better to add the pear slices graduly until the taste suits you well)
    3. Move the mixture to a bowl and stir in the cream and lime juice to mix the flavour thoroughly. Season again to taste;
    4. Pour all the soup back into a pan and reheat, stir till warmed through.

    Garnish with remaining cream, watercress leaves, and some couton before serving.
